Base:
✅ 1 & 1/2 cup GF oats
✅ 2 tbsp coconut oil
✅ A pinch of salt
✅ 8 large medjool dates, soaked in water for 30 mins. Use 1 tbsp of the date water to help blend if needed.
Filling:
✅ 1 & 1/2 cups cashews, soaked
✅ 1 tbsp maple syrup
✅ 1 cup shredded coconut
✅ One pure espresso shot (I just used my coffee machine for this part)
✅ 2 tbsp coconut oil
✅ Optional: 2 tbsp salted caramel sauce from
Topping:
✅ 150g dark chocolate of choice and more clean salted caramel sauce drizzled on top
Method:
1. Line a slice tray with baking paper and set aside
2. For the base, blitz/blend all ingredients together until smooth, and place in the tray, using a fork to press down. Pop in the freezer while you make the filling
3. For the filling, again blitz together the ingredients until smooth, cover the base and pop in the fridge. You may wish to use a spatula to even put the filling
4. While this chills, melt your chocolate of choice over low heat, and cover the top of the slice. Set in the fridge or freezer (I kept mine in the freezer) and ENJOY x
