South East Queensland hasn’t been looking very much like the ‘Sunshine State’ lately. While you’re cuddled up at home, we bet you’re craving a lovely warm home cooked meal, and since I’m writing this on a Tuesday – it’s also TACO NIGHT.

So I give you, a vegan taco slight spicy recipe, rope the entire family in on this one and make this rainy night just a little less dreary! You’ll want to keep reading for a ton of other taco filling ideas 🌮

Vegan Chorizo Potato Tacos

INGREDIENTS:

  • Large Onion
  • Soy Chorizo
  • Cooked Potatoes
  • Tortillas
  • For toppings: pico de gallo, vegan sour cream, and avocado

 

METHOD:

  1. Cook the onions over medium high in a wide skillet. Add the chorizo to the onions, break it apart and cook until it’s getting brown.
  2. Then, add in your cooked, cubed potato and cook until everything is heated through.
  3. Turn a Stove top on low, then add a tortilla to the burner using tongs.
  4. Warm the tortilla over the heat for 20-30 seconds, until it’s getting little light brown spots. Then, flip and cook another 20 seconds on the other side. Alternatively, you could warm your tortillas in the microwave.
  5. Place all the ingredients together in each tortilla and SERVE.
  6. ENJOY 💚

VEGAN TACO FILLING IDEAS:

  1. 🥔 Potatoes – Oven roasted with garlic, ground cuminchili powder & salt
  2. 🥔 Hash browns
  3. 🍠 Sweet potatoes – roasted or mashed with spices
  4. 🧅 Onions – sautéed/charred, caramelized or raw
  5. 🌶 Jalapeños – pickled, sautéed or raw
  6. 🍅 Tomatoes
  7. 🌽 Corn – steamed or roasted
  8. Black Beans – whole, seasoned with cumin and garlic
  9. Pinto Beans – mashed or refried (make sure they’re vegetarian)
  10. 🍄 Mushrooms – sautéed or grilled
  11. 🥕 Carrot
  12. Zucchini or Yellow Summer Squash – sautéed or grilled
  13. 🥬 Spinach – raw or cooked
  14. 🥬 Kale – cooked or mixed in other veggies
  15. 🥬 Lettuce – shredded on top or used instead of tortilla
  16. Purple cabbage – shredded
  17. 🥑 Avocado – sliced raw or turned into green salsa
  18. Baked tofu
  19. Cashew sour cream 
  20. 🍅 Pico de Gallo
  21. 🥑 Guacamole
  22. 🧀 Vegan chile con queso nacho cheese sauce
  23. 🧅 Pickled Purple Onions
  24. 🥕 Pickled Carrots and Onions
  25. 🌶 Pickled Sliced Jalapeños
  26. Baked tortilla strips – for crunch
  27. Quinoa – cooked with taco seasoning or any of the below seasonings
  28. 🍚 Rice – plain, Spanish rice or Cilantro Lime Rice
  29. 🥦 Cauliflower – roasted or “riced” with taco seasoning
  30. 🥦 Broccoli – roasted or raw, cut into tiny pieces
