Blueberry & Dark Choc Banana Bread

Nothing better on a cold day than a warm loaf of freshly baked banana bread! 🍌

Why not try this twist on a comfort food classic 💜 Made VEGAN, of course 🌱

INGREDIENTS:


* 3 handfuls of frozen sliced banana
* 1 Tbs chia seeds
* 1 tsp vanilla
* 200ml vanilla coconut yoghurt
* 1 1/4 cups Spelt Flour
* 1 1/4 cups old fashioned oats
* 1/3 cup coconut sugar
* 2 tsp baking powder
* 1/2 tsp baking soda
* 1/2 tsp cinnamon
* 1/2 cup hemp milk
* 30g dark chocolate, grated
* 30g chopped almonds
* 125ml hemp seed milk
* 1/2 cup frozen blueberries

 

METHOD:


1. Preheat oven to 180’C, line a loaf tray with baking paper
2. In a bowl, place defrosted banana and mash, mix in chia seeds, vanilla and coconut yoghurt
3. In a separate bowl, mix spelt flour, oats, baking powder, baking soda, coconut sugar & cinnamon
4. Mix in the banana mixture until just combined, gently fold in the blueberries, dark chocolate & almonds. Do not overmix as the bread will be tough
5. Spoon into the loaf tin, bake for 1 hour. Remove & cool. Slice & serve with a good 🌱 butter! 💜

Enjoyed best as a warm desert on a cold winter day, paired with your favourite coffee! ☕
